Wasabi's strong effect to change raw food into a safe food

Raw protein is said to be better for digestion than cooked protein in Japan so some Japanese believe if making convalescent eat sashimi ,who will get over very soon.

The pungency of wasabi derives from the pungent component Allyl isothiocyanate, which has strong antibacterial and germicidal action.

When letting Allyl isothiocyanate stay on nutrient agar which has 271 colon bacillus for 30 minutes, the number of colon bacillus became 77. In case of 60 minute stay, the number of colon bacillus became 5. In case of 24 hours stay, the number of colon bacillus became 0. In like manner, In case of 38 Vibrio parahaemolyticus staying on nutrient ager, putting wasabi on it for 30 minutes , the number of Vibrio parahaemolyticus became 0.

Wasabi is quite efficient food to eat raw food for sterilization. Wasabi is of course divided people's preferences but eating raw food is your very first experience in your life, it is worth taking advantage of wasabi to keep you from any possibilities of food poisoning. Well If you get used to it, you cannot do without wasabi for Japanese meal.
